OVEN ROASTED CHICKEN WITH CARROTS
Jaja's delicious chicken recipe
Ingredients
- One 6 pound organic, roasting chicken
- Kosher salt
- Black pepper
- A large bunch of thyme sprigs
- 1 lemon quartered
- 10 garlic peeled and smashed flat
- 4 Tablespoons extra virgin olive oil
- 1 sweet onion cut into thick rings
- 6 whole carrots peeled, washed and dried
Instructions
- Preheat oven 425 degrees F
- Rinse and dry chicken inside and out
- Rinse and dry thyme with paper towel
- Mix olive oil, salt, pepper, garlic
- Season chicken cavity with olive oil mix
- Insert finger between chicken breast and skin and season with olive oil mix, garlic and thyme
- Season between thigh and cavity with olive oil mix, garlic and thyme
- Stuff cavity with thyme, onion rings, lemon wedges and garlic
- Brush outside of chicken with olive oil mix and a sprinkle of salt
- Tie legs together with kitchen string
- Place onion rings, garlic, thyme lemon wedges in roasting pan and toss with salt, pepper, olive oil and thyme
- Place chicken on roasting rack over vegetables
- Place in pre-heated oven and roast for 1.5 hours.
- After one hour of roasting, place carrots around chicken and continue roasting until meat thermometer indicates doneness
- Remove chicken from oven
- Partially cover with foil for 15 minutes
- Place on platter with carrots
- Carve and enjoy
