OVEN ROASTED CHICKEN WITH CARROTS

  1. Preheat oven 425 degrees F
  2. Rinse and dry chicken inside and out
  3. Rinse and dry thyme with paper towel
  4. Mix olive oil, salt, pepper, garlic
  5. Season chicken cavity with olive oil mix
  6. Insert finger between chicken breast and skin and season with olive oil mix, garlic and thyme
  7. Season between thigh and cavity with olive oil mix, garlic and thyme
  8. Stuff cavity with thyme, onion rings, lemon wedges and garlic
  9. Brush outside of chicken with olive oil mix and a sprinkle of salt
  10. Tie legs together with kitchen string
  11. Place onion rings, garlic, thyme lemon wedges in roasting pan and toss with salt, pepper, olive oil and thyme
  12. Place chicken on roasting rack over vegetables
  13. Place in pre-heated oven and roast for 1.5 hours.
  14. After one hour of roasting, place carrots around chicken and continue roasting until meat thermometer indicates doneness
  15. Remove chicken from oven
  16. Partially cover with foil for 15 minutes
  17. Place on platter with carrots
  18. Carve and enjoy
